 This cheese flan recipe is very easy to prepare, it is made with little ingredients and without the need to use eggs or an oven.

If you try it, you'll see there's a smooth taste dessert, with a creamy texture, an intermission between a flan and a cheesecake. 

The truth is, it's a prescription I've kept for a long time and, although at first, when I tried it, I made it sometimes, I was unfairly forgotten. Lucky you, when you cleaned up the files, you crossed my way again!

Cheese flan the ingredients 

  1. 500 grams of milk 
  2. 500 grams of cream 
  3. 500 grams of Mascarpone cheese 
  4. 2 curd envelopes 
  5. 180 grams sugar for candy 
  6. 200 grams sugar 
  7. Three or four spoons of water a drop of lemon juice

We'll start by preparing the candy: 

we put sugar, water and lemon juice in a casserole and leave, at half-strong, very important, without spoon moving. 

  1. You have to be careful so it doesn't burn, if necessary, we can move the casserole from time to time. We'll leave the fire until all the sugar is liquid and the candy takes a golden colour. Once we have it, we split the candy between the bottom and the walls of the mould where we want to present the cheese flan. 
  2. We put the milk, cream, cheese, curd envelopes and sugar in a bowl, and we mix it with the blender, low power until it's all well integrated and we have a homogeneous mixture. 
  3. We put this mixture in a smooth fire casserole. We'll move all the time with the rods so we don't stick to us and leave the fire, right until the mixture is going to boil. 
  4. Let's pour this mixture into the caramelized mould, carefully and slowly so that we don't get mixed with candy. We let him warm up and when he's cooled a little, we'll put the refrigerator in, so he can finish the curd. Right before we serve, we unmold carefully and decorate our cheese flan to taste.
